Ingredients:
1 cup 0% fat pancake mix
2 egg whites
1 cup 0% fat skim milk
4tbsp. jam or jelly or choice
Preparation:
Mix pancakes as per instructions to guarantee they turn out. I never follow the directions and always add 0% milk and egg whites for the extra protein. Feel free to do the same and experiment. I typically mix 1:1 of dry and wet ingredients.
Pour into parchment paper lined baking dish.
Heat jam until slightly runny on stovetop or in microwave.
Stir jam into pancake mixture.
Bake in oven 350F for approximately 35 minutes or until toothpick comes out of center clean.
Remove and let cool before cutting into cake sized pieces.
