And so it begins. . . .

I have always enjoyed my time in the kitchen. Using the freshest ingredients available to create new flavour combinations. I rarely follow a recipe, or follow the recommended measurements when I do. This was all challenged in the summer of 2020, when my 8 year old son was put on a zero fat diet for a medical condition. I now had to meet a zero fat requirement, while maintaining flavour and meeting the caloric requirements of a growing boy!

It was time to get creative! Read on to find out how I was able to modify my kitchen and recipe book to meet these requirements. All while feeding my other 3 children and maintaining the high standard of health I had set for our family's meals. I hope this helps you in discovering recipes that may help you in your zero fat journey as well! I've done my best to accurately represent the amount of spice added to each batch, but I can't say that an extra pinch or two wasn't added last minute! I always think the best recipes are the ones that are well suited to your individual tastes. Let this be a guide to get you started. Add more or less of anything (except fat) you see in the ingredients list. Make it your own!

To clarify, a zero fat diet is considered anything under 0.5g of fat per serving. As my son remained stable we were slowly able to increase his fat to 1g per serving. I hope as he improves we will gradually be able to add the fat back into his diet. Until then it is time time to explore new options and get creative. This blog is about all of the recipes I have created through trial and error. The ones my son has enjoyed and asks for most frequently made the cut. I hope this helps you on your journey!

 

Update: I now have the most fabulous sous-chef joining me in the kitchen. My son has taken such an interest in not only creating new recipes, but also doing some of the hard work of washing, chopping, frying and mixing! He is a joy and a creative inspiration. I am so thrilled to have him involved.
