A nice alternative to meaty burgers.
Ingredients:
1 medium sweet potato, cooked and mashed
2 medium potatoes, cooked and mashed
1 can (398ml) mashed black beans (0.5gfat/ 1/2 cup)
4 cloves garlic, minced
Handful fresh chives, chopped or 1tbsp dried
Handful fresh oregano, chopped or 2 tsp dried
Handful fresh basil, chopped 2 tsp dried
Salt and Pepper to taste
2/3 cup 0% fat rice flour
3 egg whites
1 medium zucchini, grated with water squeezed out
4 medium carrots, grated with water squeezed out
1 green pepper, diced
Preparation:
Cook and mash both regular and sweet potatoes.
Mash black beans and add to potatoes.
In a large bowl combine herbs, spices, and rice flour, mix well.
Beat eggs and add to herb bowl along with vegetables.
Combine herb and vegetable bowl with potato bowl. Mix well.
Measure out 1/4 cup of mix. Shape into patties and place on parchment lined oven safe tray or dish.
Place in oven and bake at 375F for approximately 30mintues.
