
Ingredients:
1-2 cups fat free basmati rice
1/4 cup red onion, chopped
4-6 cloves garlic, crushed
Thumb sized piece fresh ginger, grated
1/2 tsp. cayenne
1 tsp. cinnamon
1 tsp. pepper
1/4 tsp. cloves
1/4 tsp. fennel
1/4 cup soy sauce
1/4 cup maple syrup
2 tbsp. white wine vinegar
4 cups homemade veggie stock
1 cup tomato paste
2 tbsp. corn starch
Preparation:
Prepare rice as per directions and set aside.
Soften onions, garlic in pot with spices.
Add soy sauce, maple syrup, white wine vinegar and veggie stock. Heat well.
Whisk in tomato paste and corn starch.
Heat till reduced and thickened.
Mix sauce and rice well. Serve with a side of vegetables. Garnish with fresh coriander if desired.
