Twice Baked Stuffed Sweet Potatoes

Ingredients:

4 sweet potatoes


1c 0% fat basmati rice


1/4c 0% fat tomato sauce

1/2c shredded spinach

1tbsp dried oregano

corn flake topping


Preparation:

  1. Slice sweet potatoes in half and place in oven @375F for approximately 40min or until center is soft and can be scooped out easily. Once cooked and cool enough to handle, scoop out insides and place in bowl.

  2. Cook rice as per instructions.

  3. Mix rice with sweet potato, tomato sauce, spinach, oregano

  4. place mixture into hollowed out potato. Top with corn flakes. Place back in oven and bake until top becomes crispy and potato is heated through. Approximately 10-15min.
