When it's burrito night this is a much healthier (and tastier) option!
Ingredients:
1 Pkg. rice wraps (0%fat)
2 home ground turkey breasts**
4tbsp honey
4-6 cloves garlic, crushed
4 medium sweet potatoes, cooked and mashed
1 cup 0%fat basmati rice, cooked
Preparation:
Cook the rice.
Fry the turkey in a little water (so it doesn't stick to the pan), honey and garlic.
Cook and mash potatoes.
Soften the rice wraps in warm water and lay flat. Fill with potato, rice and turkey. Roll wraps tightly.
Place wraps on a parchment lined baking dish and place in oven at 325C for approximately 15-20 minutes, or until fully warmed through.
Serve warm and Enjoy!
**Be sure you grind the meat yourself! Such an important step not to skip. The ground turkey from the store includes lots of filler and has a fairly high fat content for our goals. I buy whole turkeys from friends, cut the breast, trim any visible fat and send it through my KitchenAide meat grinder. Close to zero fat comes off this meat when cooked.
* Any extra turkey meat can be frozen for later use.
