Ingredients:
1/4 red onion, diced
1 rib celery, diced
1tsp. coriander
1tsp. cumin
2tsp. paprika
3tsp. chili powder
1tsp. cajun
1lb skinless turkey breast, ground (see turkey post)
2 large peppers, diced
1 large carrot, diced
2 tins diced tomatoes (796ml x2)
1 can corn undrained (341ml)
Lime wedges to garnish
Preparation:
Fry onions, celery and spices in pan until onions soften.
Add turkey to pan - fry until cooked. There should be little to no fat after frying. If there is any fat remaining drain well on paper towel, ensuring no additional fat is added to the pot.
In separate pot have tomatoes, carrots and corn heated thoroughly. You will need to bring to a boil for a bit in order to soften carrots.
Add pan contents into pot along with peppers and stir together. Heat until peppers soften, but retain a bit of a crunch.
Serve in little bread bowls. I made these using a basic fat free bread recipe (no oil) and placing them in muffin tins to bake.
