Ingredients:
1/2 red onion, diced
4 cloves garlic, crushed
1 tsp curry powder
1 tsp cinnamon
1 can diced tomatoes (796ml)
1 can tomato paste (156ml)
1 can pineapple tidbits (398ml), not drained
6 small potatoes, diced
1 large sweet potato, diced
2 small butternut squash, diced
2 celery stalks, diced
1 large green pepper, diced
1 can dark red kidney beans (540ml), rinsed
1tbsp corn starch
Preparation:
Add onion, garlic, curry powder, cinnamon to pot with a few tablespoons of water. Heat until onions become clear.
Add remaining ingredients, except kidney beans and corn starch
Ensure all ingredients are covered by liquid, if not, add more water.
Bring to a boil until all vegetables are cooked
Add corn starch and kidney beans. Reduce heat to medium-low until heated through and sauce begins to thicken.
