Ingredients:
2 cups 0%fat basmati rice, cooked
1/2 large red onion, diced
1 can black beans, rinsed
2 green peppers, diced
1 can corn, drained
1tbsp. paprika
6 cloves garlic, crushed
Handful fresh chives
Handful fresh basil
6 egg whites
1 cup fresh chopped tomatoes
1 can tomato paste
Preparation:
Scoop out middle of zucchini, save seeds for planting next year. Any remaining flesh can be roughly chopped and added to rice mixture
Cook rice as per directions
Sautee onion and pepper. Add paprika, garlic, basil and tomato paste.
Mix all ingredients well in a large bowl. Be sure onions and peppers have cooled enough, so they do not cook the egg whites.
Stuff the mixture into the hollowed out zucchini
Bake in oven @375F for approximately 45minutes or until zucchini is soft.
*This dish also works well on the BBQ
*We topped it with a drizzle of fat free ranch salad dressing
