Sweet Potato Burgers

This is the same recipe as the sweet potato "corn dogs" just shaped into burger form. Can also be served on a zero fat biscuit for a different feel.

Ingredients:

1c 0% fat basmati rice, cooked

1c fat free chicken stock

1c water

small handful fresh chives, chopped

2tbsp honey

1tbsp soy sauce


1/2 red onion chopped

Handful of fresh chives, chopped

4 cloves fresh garlic, crushed

2 tbsp. dried basil

1 1/2 cups carrot, grated

2 cups sweet potatoes, mashed

1 can tomato paste

1 can corn, drained


Preparation:

  1. Cook rice as per instructions, using 1 cup of fat free chicken stock and 1 cup of water. Once cooked stir in chives, honey, and soy sauce.

  2. Cook potatoes until soft and mash.

  3. Place remaining chives, onion, garlic, basil, tomato paste and corn in bowl mix well.

  4. Add carrot to bowl and mix.

  5. Combine carrot mixture with cooked rice and mashed potatoes.

  6. Shape into "burgers". Place on parchment lined oven safe dish and bake @375F for approximately 30min
