Sweet and Savory Kabobs

My son came up with this on the way home from some follow up tests at the hospital. He is becoming very excited about his diet and adding his input. We all really enjoyed this treat as an appetizer, but it can be served anytime, warm or cold.

Ingredients:

2 large apples, cut into chunks, skin on

2 large pears, cut into chunks, skin on

2 large beets, peeled and sliced

1tbsp. cinnamon

1tbsp. ginger

1 tbsp. balsamic vinegar


Preparation:

  1. Sprinkle the chunked apples in cinnamon and mix well. Keep the skin on, this helps keep the apples shape when placing on kabobs. Place in oven safe dish.

  2. Sprinkle the chunked pears in ginger and mix well. Keep the skin on, this helps keep the pears shape when placing on kabobs. Place in oven safe dish separate from the apples.

  3. Bake pears and apples for approximately 30 minutes at 350F. You want them to be soft, but not mushy.

  4. While the apples and pears are baking steam the sliced beets until tender.

  5. Once tender pour 1 tbsp. of balsamic vinegar and mix well.

  6. Skewer cooked fruit and vegetables. Eat warm or cold. Enjoy!


**Do you notice the little fleck of beet on the pear chunk that was oddly shaped exactly like a heart? Thought that was neat.
