All the kids loved these. A nice variation on the classic meatball, which my son was missing.
Ingredients:
2 cups 0% fat basmati rice, cooked (1 cup for meatballs, 1 cup for serving)
2 tbsp. honey
1tsp. soy sauce (reduced sodium)
large handful fresh chives
5 haddock fish fillets (approx. 85g each), blended
1 tbsp. paprika
Handful fresh basil, chopped
1 lemon, juiced and zested
1/4 cup celery, diced
1 cup carrot, grated
1 can tomato paste (156ml)
1/2 green bell pepper, diced
4 large egg whites
Preparation:
Cook rice as per instructions. Once cooked stir in honey, soy sauce and chopped chives
Blend fish in blender (vitamix) until smooth.
Combine remaining ingredients (paprika, basil, lemon juice and zest, celery, carrot, tomato paste, green pepper and egg whites) with the fish.
Combine fish with half of the prepared rice
Measure into 1/4 cup sections and form into balls.
Place on parchment paper on ungreased pan and bake in oven for 30-45min @ 350F
Serve over a bed of rice and enjoy!
