Roast Tomato Soup

Ingredients:

4 cups carrots, sliced

6 cups Whole Roma tomatoes

1 bulb garlic, whole

2 ribs celery, sliced

1/2 red onion, sliced

1 tsp. Thyme

1 tsp. Sage

Large handful fresh Basil

4-6 cups homemade veggie stock

Enough pepper and basil to garnish


Preparation:

1. Roast carrots, tomatoes, garlic, celery and onion in oven at 400F for 25min.

2. Place roasted vegetables in pot with veggie stock. Bring to a rolling boil until all vegetable become soft.

3. Blend with immersion blender.

4. Serve and Enjoy!
