Ingredients:
1 whole chicken, skinned and trimmed
2 lbs. carrots, peeled and sliced
1 cauliflower, chopped
5 lbs. potatoes, peeled and diced
Montreal chicken spice (sodium reduced) as per taste
2 stalks celery
Small handful fresh Sage
Small handful fresh Basil
Preparation:
Remove all skin and visible fat from chicken. We raise our own free-run chickens so they have very little fat on them to begin with. If you can find somewhere to get your own farm fresh free-run chicken that would be great. If not, just trim all visible fat and skin. Place in roasting pan with 1/2" water on bottom. Sprinkle chicken with Montreal Chicken Spice, sage, and basil. Add celery to pot. Place in oven covered and roast at 375F for approximately and hour, depending on the size of your chicken. Feel free to change the spices, there are so many different variations to this dish.
Steam carrots and cauliflower.
Roast potatoes (see separate post).
Serve and enjoy!
**Option: serve with fat free gravy.
**Only serve the chicken breast to the person on the low fat diet. The other parts of the chicken contain more fat. Make your meat portion small to further reduce fat intake.
