Raspberry Cheese Cake

Crust

Ingredients:

1 egg white

1/2 cup brown sugar

6 fat free ice cream cones

6 fat free sugar cones


Preparation:

  1. Blend cones, but keep some texture. Mix with egg and sugar.

  2. Place evenly in bottom of parchment lined pan.

  3. Bake @375F for approximately 10 minutes or until browned. Remove and cool. While cooling prepare topping.

Cheese Cake

Ingredients:

2.5 cups 0% fat cottage cheese

1/2 cup 0%fat Greek yogurt

3 tbsp. skim milk powder

1/2 cup frozen raspberries, lightly mashed with a fork

2 tsp cinnamon

1 tsp nutmeg

2 egg whites

3tbsp. corn starch


Preparation:

  1. Blend all ingredients for topping in blender, except raspberries. Once topping is blended place on cooled crust. Use fork to swirl in mashed berries

  2. Bake in oven @325F for approximately 30minutes or until middle is slightly jiggly, but firm.

  3. Fully chill in fridge before serving for best results. If you just can't wait eat it warm (like we did!)
