Potato Soup

Ingredients:

2 tsp. thyme

4-6 cloves garlic, crushed

1 leek, chopped

1 rib celery, chopped

Chicken stock (946ml)

1 cup water

2 large carrots, diced

6 large cremini mushrooms, sliced

6 med/large potatoes, diced

2 cups fat free skim milk


Preparation:

  1. Add thyme, garlic, leek, and celery to pot. Fry until celery softens.

  2. Add chicken stock, water, carrots, mushrooms and potatoes to pot. Bring to a boil until carrots soften and potatoes are cooked.

  3. Reduce heat to medium and add milk. Cook until heated through.

  4. Garnish as desired. Serve and Enjoy!
