Potato Salad

Ingredients:

4-6cups potatoes peeled and cut into bite sized chunks. (The range is there to help with personal taste preferences. The less potatoes you add the saucier your salad will be The more potatoes the less saucier. Choose what you like best!)


1/2 yellow pepper, diced

1/2 orange pepper, diced

2 tbsp. 0% fat Zesty Italian Salad Dressing


Sauce:

6 tbsp. 0% fat Zesty Italian Dressing

4 tbsp. "fat-free" sour cream (0.3g fat/2tbsp)

2 tbsp. 0% fat honey mustard

Handful fresh chives, chopped


Preparation:

  1. Wash, Peel, and Chop potatoes into bite sized chunks. Boil potatoes until tender, but not mushy. Drain potatoes and set aside.

  2. Fry peppers in 0% fat Italian dressing.

  3. Mix sauce ingredients in large bowl. Add potatoes and peppers to sauce bowl and mix well.
