Potato Balls

Ingredients:

2 cups finely diced carrots

2 cups finely chopped broccoli crowns

2 cups finely chopped mushrooms

6 cups cooked mashed potatoes

1/2 cup leeks finely chopped

1-2 tsp. Rosemary

4-6 cloves garlic, crushed

2-4 tbsp. skim milk, optional

2-4 tbsp. fat free sour cream, optional

Panko bread crumbs, fat free


Preparation:

  1. Cook and mash potatoes, can use fat free skim milk or sour cream for a creamier potato, or just a little water. Place in large bowl along with garlic, rosemary and leeks.

  2. Fry excess water out of mushrooms, place in bowl with potatoes.

  3. Lightly steam, but do not fully cook, carrots, and broccoli. Add to bowl with potatoes.

  4. Mix all ingredients in bowl together.

  5. Create small balls with potato mixture.

  6. Roll each ball in panko breadcrumbs.

  7. Air fry until outside becomes crispy.

  8. Serve with dipping sauce. Pictured here is fat free ranch salad dressing.
