Pineapple Rice

Ingredients:

2 cups 0% fat balsamic rice Pineapple juice from can + water

Handful Fresh Chives, chopped


Sauce:

1/4 cup honey

6tbsp. Apple Cider Vinegar

4tsp. Soy Sauce

1 can Tomato Paste

2 tbsp. Cornstarch

2tbsp. Water

1 can Pineapple Tidbits, drained and juice set aside for rice


1 head broccoli, diced

1 head cauliflower, diced

2 large carrots, diced

1 large sweet potato, diced


Preparation:

  1. Cook rice as directed using pineapple juice from can and water. Once cooked, stir in chives and set aside. Keep enough chives for garnish.

  2. Mix sauce ingredients together well and add vegetables.

  3. Sautee vegetables in sauce until soft.

  4. Mix rice and saucy vegetables together. Garnish with chives and serve warm. Enjoy!

* This was served with some fancy low fat breadsticks

**For this recipe you can substitute in any of your favourite vegetables. Sometimes I add sweet peas, peppers, spinach etc. Anything goes!
