"Mincemeat" Tarts

Ingredients:

1 cup dates, chopped

Zest and juice 1 large orange (pulp too)

Zest and juice 1 lemon

1 cup sultan raisins

1 cup craisins

1 cup dried apricots, chopped

1 cup currants

1 cup brown sugar

200ml apple juice

1/4 cup pure maple syrup

2 apples, diced

1tbsp. cinnamon

1 tsp. nutmeg

Ginger, fresh thumb size piece, grated

1 tsp. dried ginger

1 tsp. cloves


Preparation:

  1. Place all ingredients in slow cooker.

  2. Cook on HIGH for 3-4 hours or LOW 4-6 hours (your house will smell amazing!)

  3. While everything is coming together in the slow cooker. . . arrange a few layers of phyllo pastry into muffin tins. Bake until golden brown.

  4. When "mincemeat" is ready serve warm in phyllo shells.
