Maple Vegetable Bake

Ingredients:

1 butternut squash, peeled and sliced

4 large carrots, thinly sliced with mandolin

2 heads broccoli, chopped


Sauce:

1/3 cup pure maple syrup

6 tbsp. balsamic vinegar

2 tsp. garlic salt

2 tsp. thyme


Topping:

6 sweet potatoes, mashed

1/4 cup 0% fat skim milk

2 tbsp. pure maple syrup

1 tbsp. cinnamon


Preparation:

  1. Layer butternut squash, carrots, broccoli into a baking dish.

  2. Mix all sauce ingredients together and pour over layered vegetables.

  3. Boil and mash potatoes using skim milk, syrup, and cinnamon. Layer on top of vegetables.

  4. Bake @ 350F for approximately 45 minutes.
