Ingredients:
1 butternut squash, peeled and sliced
4 large carrots, thinly sliced with mandolin
2 heads broccoli, chopped
Sauce:
1/3 cup pure maple syrup
6 tbsp. balsamic vinegar
2 tsp. garlic salt
2 tsp. thyme
Topping:
6 sweet potatoes, mashed
1/4 cup 0% fat skim milk
2 tbsp. pure maple syrup
1 tbsp. cinnamon
Preparation:
Layer butternut squash, carrots, broccoli into a baking dish.
Mix all sauce ingredients together and pour over layered vegetables.
Boil and mash potatoes using skim milk, syrup, and cinnamon. Layer on top of vegetables.
Bake @ 350F for approximately 45 minutes.
