Ingredients:
4 skinless chicken breasts, any visible fat trimmed
1 pkg. mushrooms (227g), halved
4 red bell peppers, sliced into strips
Sauce:
1/4 red onion, chopped
4 cloves garlic, crushed
1 tsp. basil leaves
1 tsp. oregano leaves
1 can tomato paste (156ml)
1/3 cup dry red wine
2 tbsp. sugar
2 tbsp. corn starch
Preparation:
Place chicken, peppers and mushrooms in bottom of oven safe dish.
Mix all sauce ingredients together and pour oven chicken, mushrooms and peppers.
Bake @350F for approximately 45 minutes or until internal temperature of chicken reaches 165F.
**I served this with rice and swiss chard.
