Mummy Cookies - step-by-step. The kids had so much fun making these little treats!
Ingredients:
Several sheets, Phyllo Pastry (0.5g fat/1 sheet). 1 sheet is fairly large, meaning several cookies can be eaten at once!
1c pumpkin puree
1tsp cinnamon
1/2 tsp ginger
1/2tsp. nutmeg
2tbsp. brown sugar
Raisins, as needed
Preparation:
Cut Phyllo pastry into circles and set aside. I made my circles 3 sheets thick to be able to hold the pumpkin filling.
Cut several small strips of phyllo pasty and set aside.
Place a small spoonful of pumpkin filling in the center of the pastry circle. Add the eyes and lay strips however you would like to resemble a mummy.
Bake @350F for approximately 1/2hr. or until the phyllo pastry crisps up and the pumpkin filling is warm.
Assemble Ingredients
