Stuffed "jack-o-lantern" Peppers
Ingredients:
1pkg (227g) mushrooms, sliced
3tbsp. Worcestershire Sauce
8-10 (or more) peppers, depending on size
2c 0% fat basmati rice
1 can dark red kidney beans
1can corn, undrained
3/4c of your favourite BBQ sauce
Preparation:
Fry mushrooms in the Worcestershire Sauce.
Cook the rice as per directions.
Add rice, mushrooms, corn and beans to large bowl. Mix in BBQ sauce.
Wash, cut tops off peppers, as if you were carving a pumpkin. Remove seeds. Carve whatever face you would like into the pepper.
Place the filling into the peppers.
Bake at 350F for approximately 45minutes or until the peppers are soft and filling is heated through.
