Garam Masala Stir Fry

Ingredients:

Mushrooms (227g), sliced

3tbsp Worcestershire Sauce


2c 0% fat basmati rice

4tbsp soy sauce

2tbsp honey

Handful fresh chives, chopped


1/2 white onion, chopped

2tbsp Garam Masala

1 stalk celery, diced

1c 0%fat chicken broth

4 carrots, diced

2 large sweet potatoes, diced

1 head broccoli, chopped

1 head cauliflower, chopped

1/4 cabbage, chopped

1 can summer sweet peas, not drained


Preparation:

  1. Fry Mushrooms in Worcestershire sauce. Set aside.

  2. Prepare rice as per instructions. Once cooked, stir in soy sauce, honey and chives.

  3. Add onion, celery, and Garam Masala to pan and fry in water until onions are softened.

  4. Add chicken broth, carrots, sweet potatoes to pan and soften.

  5. Add cabbage, cauliflower, broccoli and soften.

  6. Finally add peas, including juice, and mushrooms.

  7. Serve over rice and enjoy!
