A refreshing lunch option
Ingredients:
3 Rice Wraps
1/2 cup grated carrots
Couple leaves of fresh lettuce, washed and shredded
1/2 red pepper, cut into thin strips
1/2 green pepper cut into thin strips
1/8 red onion, diced
Small handful fresh chives for garnish
Preparation:
Soak rice paper in water until soft, as per directions
Lay rice paper flat and add ingredients to one end of paper.
Roll paper tightly
Slice and serve.
**I served these with a side of fat free ranch salad dressing for dipping
