Fresh Vegetable Rice Wraps

A refreshing lunch option

Ingredients:

3 Rice Wraps

1/2 cup grated carrots

Couple leaves of fresh lettuce, washed and shredded

1/2 red pepper, cut into thin strips

1/2 green pepper cut into thin strips

1/8 red onion, diced

Small handful fresh chives for garnish


Preparation:

  1. Soak rice paper in water until soft, as per directions

  2. Lay rice paper flat and add ingredients to one end of paper.

  3. Roll paper tightly

  4. Slice and serve.


**I served these with a side of fat free ranch salad dressing for dipping

**You can stuff these with anything, pick your favourites and Enjoy!
