This was another meal that disappeared quickly. Fat free sour cream provided a creamy richness to the dish, that is otherwise lacking in most fat free options!
Ingredients:
1 pkg. (900g) low fat rotini (1g fat/1.5cups)
1 can tomato paste
3/4c fat-free sour cream
2 extra large beets, diced
4 medium carrots, diced
Can of summer sweet peas, not drained
2 broccoli crowns, chopped
1/2 large red onion, diced
4-6 cloves garlic, crushed
Handful fresh basil, chopped
227g mushrooms, sliced
4 tblsp. Worcestershire sauce
1 pkg. (227g) crab
Fresh Chives - enough to garnish
Preparation:
Cook noodles
Steam beets and carrots, and broccoli
While noodles are cooking, fry mushrooms in Worcestershire sauce. Once almost cooked add onions, garlic, and basil.
Add tomato paste, sweet peas, crab and sour cream. Heat through.
Mix in steamed vegetables.
Plate, garnish with fresh chives, serve and Enjoy!
