Chicken Fingers

What child doesn't love chicken fingers????

Chicken fingers, or anything breaded and crispy seemed completely out of the question on this zero fat diet. That quickly changed when zero fat bread and air fryer was introduced. See the "bread crumb" recipe to see how to make the crumbs, vital to these crispy, yet moist chicken fingers!


Ingredients:

3/4 cup bread crumbs (see other post)

2 large chicken breasts

2-3 egg whites


Preparation:

  1. Trim all skin and fat off the chicken breast.

  2. Cut chicken into strips

  3. Dip chicken strips into egg whites

  4. Evenly coat egg dipped chicken strip in bread crumbs

  5. Place in air fryer and cook for approximately 30 minutes.

  6. Ensure chicken is fully cooked to a temperature of 74C (165F) before consuming.

  7. Dip in your favourite fat free sauce and enjoy!!!!

I paired the chicken with a side of steamed broccoli and cauliflower as well as some oven baked potatoes. It was an instant favourite!
