Tasty and filling, perfect treat to warm you on chilly days.
Ingredients:
1/4 red onion, diced
1 celery stalk, sliced
4 cloves garlic, crushed
1 tsp. basil
1 tsp. oregano
1 tsp. sage
1 cup 0% fat basmati rice
2 cups water
Chicken stock, 0% fat (900ml)
1 can diced tomatoes, undrained (796ml)
2 large carrots, sliced
1 head broccoli, chopped
1 can corn (no salt added), undrained (341ml)
1 can sweet peas (no salt added), undrained (398ml)
2 cups 0% fat skim milk
2 tbsp. corn starch
Preparation:
Add first 6 ingredients to pot with a bit of water and simmer until slightly softened.
Add next 5 ingredients and boil until carrots are softened and rice is cooked.
Add broccoli, cook until softened.
Reduce heat and add remaining 4 ingredients. Cook until heated through and thickened. Serve and Enjoy!
