White Fish such as; Haddock, Cod, Sole, Crab, Lobster, and Pollock are among the fish with the lowest fat contents. They are versatile and easy to prepare. This dish is a quick and simple one pot wonder for those rushed days. This dish I cooked on the BBQ and used a cast iron pan. Cast iron is greased between uses to prevent rust. Be sure to prewash the pan to remove any excess grease and keep the fat content to a minimum. The tomatoes and water will prevent any food from sticking to the pan.
Ingredients:
2 Haddock Fillets
Handful of each Green and Yellow beans Handful of fresh Basil
Handful of fresh Oregano
1 cup Cherry Tomatoes
Preparation:
Add 1/2 inch of water to bottom of pan.
Place fish in pan.
Top with washed beans, tomatoes and herbs.
Cover and cook at 400F for approximately 25 minutes.
Garnish with fresh chives.
Serve and enjoy!
** For a carbohydrate, I paired this meal with some BBQ roasted potatoes. You could use anything that falls into a zero fat category as your side (ie. rice, squash, dried fruit etc.) See separate recipe.
