Carrot Sweet Potato Soup

Perfect way to warm up after spending the morning out in the snow!

Ingredients:

1/4 red onion, chopped

2 tsp. cinnamon

1 tsp. curry

2 tsp. ginger

Dash (or two) of cayenne pepper

2 cups water

0% fat chicken stock, no added salt (900ml)

6 large carrots, sliced

4 sweet potatoes, peeled and chopped

4 apples, peeled, cored and sliced (MacIntosh)

4 tbsp. pure maple syrup


Preparation:

  1. Add onions and spices to pot with a little water and fry to soften onions.

  2. Add remaining water and chicken stock to pot along with carrots and potatoes. Liquid should just cover vegetables. Bring to a boil until softened.

  3. Add apples to pot and cook until heated through. Add maple syrup.

  4. Blend until smooth using immersion blender.

  5. Serve and Enjoy!
