Ingredients:
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. cardamom
2 large carrots, shredded (approximately 4 cups)
4 cups 0% fat skim milk
1/4 cup sugar
1/4 cup pure maple syrup
1 tbsp. corn starch
1 cup rice cooked
1/4 cup raisins
Preparation:
Cook the rice as per directions.
Add carrots, spices, and milk to pot and bring to a simmer allowing carrots to cook, but not hot enough to scald milk. Stir frequently so milk does not burn to bottom of pot.
Stir in sugar and maple syrup. Heat until sugar is dissolved.
Stir in rice and incorporate well with other ingredients.
Continue to heat until mixture thickens, approximately 30 minutes. Stir in raisins and enjoy!
