Ingredients:
2 cups 0% fat basmati rice, cooked
1/4 red onion, chopped
2 tsp. basil
2 tsp. oregano
4 cloves garlic, crushed
1/4 cup water
2 large carrots, sliced
2 large yellow bell peppers sliced
1 can 0% fat tomato sauce (680ml) - you can also substitute fresh tomatoes if you prefer
1 can red kidney beans - no salt added (540ml), drained and rinsed
Preparation:
Cook rice as per directions, using water or 0% fat chicken stock.
Add first 4 ingredients to pan with a little water and fry until onions soften.
Add carrots, water and 1/2 tomato sauce. Simmer covered until carrots soften.
Add peppers, kidney beans and remaining tomato sauce.
Once peppers soften, stir in cooked rice and serve.
**The beans contain 0.5g fat/ 1/2 cup. On this low fat diet, you should not exceed 1/2 cup beans/day.
