A meaty flavour without the meat.
Ingredients:
1 cup brown lentils (0.5g fat/1/2 cup)
4 cups diced potatoes
1/2 cup 0% fat skim milk
2 large carrots, thinly sliced (use mandolin)
1 can summer sweet peas, save juice from peas for cooking lentils
Handful fresh chives, chopped
1/4 cup of your favourite BBQ sauce
Preparation:
Cook lentils as per directions, using both juice from peas and water. Once cooked stir in BBQ sauce.
Boil potatoes until soft add milk and chives then mash until smooth.
Layer lentils, carrots, peas and finally potatoes.
Bake in oven 350F until heated through and crisp on top. Approximately 30 minutes.
