This recipe was adapted from "Nadiya Bakes"
Falafel
Ingredients:
4 tins of your favourite fat free baked beans
4-6 cloves garlic, crushed
1 tsp. chili powder
1 tsp. coriander
1 tsp. cumin
1 cup (approximately) rice flour to bind everything together
Preparation:
Press all the sauce out of the beans through a colander. Rinse the beans. Put the sauce aside and mash the beans thoroughly or blend in blender.
Add fresh herbs and garlic to the beans and mix well.
Add in rice flour until mixture sticks well together. May need more than 1 cup.
Shape into patties and bake in oven at 400F for 25-30 minutes.
Place falafel on bun and top with slaw.
Coleslaw Ingredients:
Baked bean sauce (see above)
2 tbsp. fat free yogurt or sour cream
1 tsp. parsley
1/4 tsp. siracha
Juice of fresh lemon
1 large carrot, shredded
1/4 large cabbage shredded
Preparation:
Mix all ingredients together
Pour over shredded cabbage and carrots and mix well.
