Big batches of meatballs, burgers and meatloaf perfect for freezing making future meals quick and easy.
Ingredients:
1 whole turkey, skinned
1 large bulb of garlic or 2 small ones, crushed
Large handful fresh chives, chopped
Large handful fresh basil, chopped
Large handful fresh oregano, chopped
Handful of fresh rosemary, chopped
2 cups 0% fat basmati rice, cooked
12 egg whites, beaten
1 can tomato paste (you can add 2 if your turkey breasts are on the larger side)
~4tbsp. honey
Preparation:
Begin with whole fresh turkey. Remove Skin and any obvious fat.
Cook Rice as per directions and set aside to cool. You could use water or 0% fat chicken stock for this. If you choose stock watch the sodium content, some can be exceptionally high!
Remove breasts, careful to get all the meat with little fat.
Roughly chop meat into strips. Don't worry what it looks like, it will be going through the grinder.
Place meat through the grinder and catch in bowl, pan or whatever you have handy. Be sure to go slow enough that you don't jam the machine. Once all meat is ground, store in fridge while you assemble the rest of your ingredients.
Assemble herbs, wash and chop or crush (garlic)
Go back to fridge and grab your turkey meat, you are ready to assemble. Place everything in the bowl. Be sure your rice is cool enough to work with your hands.
Drizzle in some honey and mix! I find your hands work best, but you can try a spoon or something if you don't like the mess or feel.
Shape into desired sizes in non-greased parchment lined pans.
Bake at 375F for approximately 30-60 minutes, depending on the size and shape of the meat (meatballs will cook faster than the meatloaf).
Remove from oven and Enjoy!

**It may seem like there is too much rice in the recipe. I like to keep the rice ratio higher than the amount of turkey in the recipe. Helps to cut the fat even further.
**I began with a whole turkey so I could roast the remaining turkey for the rest of the family. I then made stock from the bones and froze it for soup making later this Fall and Winter. You could always just buy boneless, skinless breasts from the store. I strongly recommend grinding the meat yourself. The ground turkey in the store contains many different cuts and could include fattier parts of the turkey making the fat content much higher than the desired amount.
